Moroccan Spiced Whiting Wraps(or other white fish)

Don't get too excited as although this is a Whiting recipe and is not a normal shop brought fish product I have made it with fillets of Cod,Pollock,river cobbler,as all of those are sustainable white fish that you can buy from "Tesco" for example
and have a non descript fish flavour and hense lend themselves well to this recipe.............



So,every winter we end up with a bucket full of these sods while after Mr Coddy but I tell ya what simply fried,or spiced up oven versions like this recipe, their tasty fish and worth taking home for the pan.



Lets assemble our Ingredients and have a lunch time fish wrap.

1 jar Schwartz Moroccan Herb & Spice Blend
Fillets of Fresh Whiting skinned
Seasoned Plain Flour
500g bag of Panko Breadcrumbs
Olive Oil spray
2 fresh eggs beaten
Fresh Lemons
Red Onions sliced
spring onions chopped fine
Small Tomatoes chopped fine
Red & Green Peppers Sliced
Fresh Rocket
Fresh Lettuce
Fresh coriander
Packet of Tortilla Wraps
Packet Cous cous
salt & pepper




This is Schwartzes jarred version of El Has Hanout a mixed spice and herb combo that's used on fish and meat fillets......it contains.....

Roasted Cumin,Sweet Paprika,Dried Onion,Ground Garlic,Ground Coriander,salt,Ground Black Pepper,Ground Mint,Ground Cinnamon,Ground Yellow Mustard Seed,Ground Turmeric,Ground Cloves,Ground Fenugreek,Ground Fennel Seed,Ground Nutmeg,Ground Allspice,Ground Cumin,Ground Cayenne Pepper,Ground Rosemary,Ground Basil,Ground Oregano,Ground Margeram and finally some Ground Thyme...!!!!!!!!!!!!!

so with that balanced combination it produces a rich blend of flavours
ideal for our Whiting.



I tend to make the Cous Cous first from its instructions and set it aside...eating it just warm or cold...just as tasty either way.



After skinning and filleting our Whiting just sprinkle the dry rub spice ingredients over the damp flesh then..............



Dredge in seasoned flour.........then............



Soak the fillets in egg wash and liberally coat the fillets in Panko Breadcrumbs and place on an oven tray....give them a quick spray of Olive Oil all over....and your ready to cook.

PREHEAT YOUR OVEN TO 200 DEGREES  !!!!!!!!!!!!!




Meantime quickly fry off the Peppers and Onions in a pan but don't overcook as we still want them with a bit of crunch.



Cook your Whiting Fillets for 15 to 20 mins,check they are cooked through by opening the crunchy coating,it should reveal a soft white centre with a flaky texture.....sorted.



warm your Tortilla in the oven for 2 mins and place on a plate,now assemble the Lettuce and remaining vegetables at one end....then place  your fried peppers and onions on top.... now place your whiting fillet so it just overlaps one end.

Sprinkle the chopped Tomatoes,Spring Onions and a large dollop of Tzatziki
on the fillet.
now bring the other end of the wrap over the fillet and roll up from the bottom to the top..!!!!!!!



Serve some of the cous cous on your plate and top with your Whiting Wrap.
Grab hold and squeeze some fresh Lemon juice down the end and tuck in
to a medium spiced snack that's well tasty  !!!!!!!!!!!
