does anyone have any recipe's for squid as all I seem to do is make a stir fry with them it gets a bit samey after a while

if you have never tried slow cooked quid it's well worth it- the squid go tender again after an hour or so cook with a can of tomatoes, chilli and garlic and perhaps an anchovy or two.

Otherwise score marinade in lemon, olive oil herbs and grill for minimum time.

stuffed squid can be good too google some recipes- stuff with rice, feta or mediterannean veg- but no good if you have bought squid rings though- need a complete cleaned squid cavity

great shellfish inmho but a lot more expensive now than it was a few years ago

Make a batter, flavour with some chopped chilli, and lime rind and deep fry the squid in the batter.

Serve with a mixed salad and some homemade tartare sauce flavoured with a little chilli and lime juice. :icon_cheers:

Squid tubes are cheap as chips ,I buy a whole box of squid(ave 12) for £2 squid from a frozen fish dealer near me,so not expensive.

Stuffed squid is a spring/summer fav on the barby or grill so this is my take............

Clean and prep your squid hoods,remove the head and tentacles.

Chop the tentacles small
Raw prawns deveined and chopped fine
1/2 inch cube of fresh ginger grated
2 garlic cloves grated
2 spring onions fine chopped
1 stem lemon grass fine chopped
1 tbsp fine chopped Coriander
1 tbsp lime juice
1 tbsp fish sauce
1 tsp dark soy sauce

veg oil for cooking

simply flash fry the above ingredients and cool slightly,then stuff the squid hoods around 80 % as the squid will shrink when you cook it,wet some wooden cocktail sticks and sew up the opening.

Sear the Squid hoods quickly on a barby/grill about 3 or 4 mins should be enough.

additional stuffing ideas.

prior to stuffing the hoods you can add white crab meat to the mixture or dark crab meat if you enjoy a more intense seafood flavour.

another fav is to add some Thai sticky rice to the seafood mixture before stuffing the hoods.

A tasty dipping sauce for the stuffed squid hoods is................

Tamarind Dipping sauce.

1 tin of Italian Tomatoes seeded and chopped(or fresh equivelent)
1 Tsp Piri Piri Sauce
3 Tbsp Tamarind Paste( or too taste)
1 Tsp Ground Cumin Powder
1 Tsp Garam Masala Powder
2 Tsp Sugar
1 Tsp Salt
water



blend together and add extra water if a thinner dip is preferred
