Courgette Pickle

500g sliced courgettes
3 shallots (or onion) sliced
2TBspoons salt
------------------
500ml cider vinegar
120g sugar
1TSPoon mustard powder
1TSPoon mustard seeds
1TSPoon celery seeds
1TSPoon tumeric
half dried or whole fresh chilli chopped
------------
Put thinly sliced courgette and onion in a bowl ,sprinkle over salt and cover with cold water. Leave for 1 hour. Drain and dry well.
Put all pickling ingredints in a pan , heat slowly to dissolve sugar.Bubble gently for 3 mins.
Cool ,mix in courgettes and pack in jars (2 x 500ml)
keep in fridge,ready after a few days.Store up to 2 months

I found this recipe trying to use up all the courgettes.Although it doesn't seem very special it's really yum :)

Mmmmm... thank you - I'll try this one as I have spare as well.. always seem to grow too much of everything..

My recipe for cucumber pickle is almost exactly the same as this one, except that having drained the cucumber and onion I would add that it is really important to rinse them very well, again and again otherwise there is too much salt left.
Then after making the 'syrup' I add in the  drained cucumber and onion, bring back to boil and boil for 2 mins.  Immediately  lift out the cucumber with a slotted spoon and put in jars.  Boil the liquid again for 10 mins or so then pour immediately over the cucumber.  Put a paper covering under the lid to prevent rusting, and leave a month or two.  It isn't necessary to keep in fridge.
