Found some unopened boxes of easy cook long grain rice coming near to the best before date. Has anybody tried using easy cook rice for rice pudding?

Pudding rice is different from long grain.  Shorter and takes up more liquid and gets creamy.  I am sure you can make a sweet rice pudding with long grain rice, but it would not have the same consistency.  Risotto rice is also different, however all my risottos are made with the usual long grain rice and come out ok.  Go for it.

Since rice is a long keeping grain, the 'best before' dates can be safely ignored, provided you stored the boxes in the dry.  The rice is still 'good after'  :)

Umm..tried to do that ONCE.. ::)..and it just don't turn out 'right'. Even with the sweetness it just 'feels' wrong in the mouth.

And then again I make my rice pudding with proper pudding rice savoury instead of sweet..and I like it that way, doesn't 'feel' wrong at all.. ::) ;D

To me a rice sell by date is just ....  insignificant... What can go off on a grain of dry rice? Really only if it is contaminated or left open and got moisture would it rot or go mouldy... So I'd not even think of having to use it just to be within the use by date...
