Pflaumen Kuchen Mit Streusel

"Plum Cake with Crumble Topping",me dad god bless him used to knock this one up when the Plum tree was heaving in the garden,once cooked the juicy sweet and sour fruit was tasty when eating through the cake with a nice soft crunch on top.

So............

200g Plain Flour sifted with a pinch of salt.
1 sachet of dried active yeast.
40g softened butter
5 Tbsp Caster Sugar
1 egg
100ml lukewarm milk
1 Tsp Vanilla extract (or 1/2 a vanilla pod)
750g Fresh plums stoned and quartered ( or fresh fruit of your choosing)


Prep fruit,I used half the plums from our Plot and a few shop brought victorias and some lovely ripe cherries.


Mix flour with the yeast,then rub in the butter,then mix in 3 tbsp of the sugar......then make a well in the centre and beat in the egg,milk and vanilla extract untill you have formed a soft dough.


Grease a 10ins round springform cake tin and spread dough evenly around cake tin base then cover with clingfilm and leave for an hour till dough is doubled in size.


Arrange Plums or fruit of your choosing by slightly burying fruit in dough mixture,then sprinkle over 2 Tbsp of caster sugar.

At this stage you can bake the cake as is but I luv the soft crumbly topping,anyway.......""your choice"" !!!!!!


Streusel (Crumble Topping)

25g chilled butter
50g Plain flour
25g Demerara Sugar
1 Tbsp ground Hazelnuts
1 Tbsp ground Almonds
2 Tspn Grated Lemon Zest
Pinch of Ground Cinnamon


Make the topping by rubbing the chilled butter in the flour untill it resembles breadcrumbs,then add remaining ingredients.


Sprinkle over fruit/dough mixture in tin.

Heat oven to 170 degrees and cook in centre of oven for 45 mins.



Leave to cool and serve.

I've got question about this recipe...

Does it 'need' that grumble topping or would it work without it?

Otherwise I can just taste this cake in my mouth with bit of vanilla sauce or custard.. ;D

You know what Goodlife,me mum who has eaten it this way for about 40 years only mentioned to me that cos shes""quote" getting on a tad and isnt over keen on nuts in the topping as it gets under her plate....charming..... ::) said that next weekend its her birthday so can I please make 2 to take with us to Norfolk  without the topping.

so yes,it works fine and Ill add a piccy of one in a few days.

as for the vanilla,I add 1/2 a vanilla pod to it but no reason why you cant add tuther half for extra vanilla flavouring.....we eat it cool with a cuppa 99% of the time and if you can leave it alone for 2 or 3 days in foil the juices make it even tastier"IMO".

although hot sounds good too with custard.
