Petit Pain Au Lait Rolls

Been wanting to try these rolls for ages,so set about knocking up a few for breakfast and Judes work munchies.

450gm unbleached white bread flour

50gm softened butter

1 tablespoon castor sugar

2 teaspoons salt

280ml  lukewarm milk

15gm Fresh Yeast

Method

Sieve the flour and salt into a large mixing bowl,then mix in the sugar,now rub the softened butter into the flour mixture till it resembles breadcrumbs.
Cream the yeast with 3 Tbsps of warm milk,once yeast mixture is foaming  stir in remainder of milk.
Add Yeast mixture to flour and using your hands mix to a dough.

Place dough on floured surface and work dough for 10 mins.
Place in oiled bowl and set aside in warm room with cling film over top.

after 1 hour knock back dough and divide into portions,I weighed out 140 grm balls on average.


Flatten out each ball.


Then curl edges up all around towards the middle and squeeze together.


Turn over and shape with hands to form soft bread balls.


At this stage you can either milk wash them......

or.....


egg wash them in yolk

Score tops with sharp knife and cook for 20 mins @ 180 degrees or as per your ovens equivalent.



The egg yolk wash have a glorious rich flavur and are tasty with butter and jam.


The lighter textured milk wash ones are equally tasty but ive got in the habit of topping them with jam and fresh blueberries from the  plot.
From what ive read its tradition to have crystalised sugar on top but being a Diabolic I prefer low sugar jams and fresh fruit.
