Carrot,Parsnip,Butternut,Onion Puree & Soup

I dont like waste and this Puree is something tasty to have with a variety of  hot meals and the addition of 1 pint of Knorr Vegetable Stock pot and you have a tasty soup for the following lunchtime.

Ingredients
1 Large Onion chopped small
1lb Parsnips Chopped small
1lb Butternut squash chopped small
1lb Carrots chopped small.
1tbsp butter
1tbsp single cream
1 bunch parsley chopped
salt&pepper to taste


Steam all chopped vegetables till tender


Place in bowl with nutmeg and parsley season well,mash  well or use blender for a finer puree.



Add cream butter and more parsley and blend together.....and serve.

LEFTOVERS...........................



Just add 1 pint of vegetable stock with extra parsley and season again and serve with bread for next days lunch.
