Differences in Rhubarb varieties

I got given two roots last year off a fellow alottmenteer, who was splitting up his clumps. He didnt know which varieties they were, and they did little last year, but this year one already has five stalks and leaves and is a pale green leafed variety, and the second one is a darkerleafed variety just starting to grow from its buds. I wasnt aware that there were different varieties that were later than others? also should I harvest any this year or leve them build up their strength till next year?

Depends how strong they are, but in general it's probably best to pick lightly if at all this year.

The question is "Do you remove the flower stalks or not" ? ? ?

Allowing the plant to complete flowering will reduce the vigor of the plant and shorten its stalk producing season. If the plant is grown as an ornamental the tall stalks of flowers  is quite impressive. But if you are growing rhubarb as a vegetable for the stalks, then the flowers and seed stalks should be cut out as soon as they start forming.

I too was under the impression that you removed the flower stalks to avoid the plant putting all its energy in trying to produce seeds.
