A quick question for Jeannine

I've made a jar of 'Gee Whiz' today Jeannine. It's very strong as I used a mature cheddar! How long will it last in the fridge? I hope I don't end up having to chuck some of it, but I can't eat cheese on toast every day!

What other uses are there for liquid lechitin? My sister brought me a pint bottle of the stuff when she visited and at one teaspoon a time for 'Gee Whiz' it will still be in my cupboard when I am long gone!

The Cheese Whiz can be used in many ways, on toast, over veggies, in a sauce for cauli cheese and in mac and cheese.Also a bit mixed into a bread recipe with a few finely chopped onions or better still reconstituted dry onions makes a great savoury bread.

As John eats this pretty quickly I am not sure how long it will last in the fridge, it goes pretty quickly here.

The Lectithin will last many months,although I am using a jar now that is much older , it can be used in any situation where you are combing a liquid with an oil, eg, when making a gravy and you have drippings that you want to combine, a few drops of lectithin will do the job  easier. Butter and milk combine better when making buttercream cake frosting and if you make fudge a few drops will stop that  greasy look on the oustide it sometimes gets.

I use it to make my own PAM spray, much much cheaper than store bought. You need 250ml of vodka , 4 /5ml teaspoons of lectithin, shake till well mixed and put in a spray bottle or paint it on with a brush, it lasts for ages. The vodka evaporates when it heats leaving the surface non stick.

I also use it when making home made salad dressings eg if I make my own Thousand Island

If you buy a low calories butter or margaine spread and read the ingredients you will see it has water added to it, they all do, instead of paying for water you can make your own diet butter or marg by using the lectithin,I have recipes if you want.

Thanks for the info. Jeannine. The lechitin I have is a thick syrup, rather pinky brown in colour. I've been reading the label and it seems to be used as a health food as well.

As far as the Gee Whiz is concerned I'll be making bread this coming week so will add some and some crispy fried dried onions to the mix. Should be good!
