Spicy squash baked beans

The OH wanted beans on toast for lunch, not a favourite of mine.So I had a little play....
cube a small butternut squash and fry gently in olive oil,add a sliced red onion.a chopped clove of garlic and a small red chilli also chopped.Cook gently until the squash "gives" then add a can of baked beans and heat through.We had it over a jacket potato but toast might work.You could add choritzo of crispy bacon for a little contrast but even without it was yummy and the bonus is it's one less butternut to go rotten as I fear many won't store this year.

It is delicious as i make a similar recipe quite frequently which I got off of the back of a packet of Bean Cuisine (? not 100% sure of the brand name) bean mix.

I like the sound of that but baked beans are so dear here (as imported - about 1£ a tin!!!). I wonder if you could get something nice by adding a can of cooked beans, red or white) and a bit of watered down tomato paste?

Antipodes have a look on unicorn grocery under the recipe section & there's a lovely recipe for Boston beans. I must say it does look yummy. Sorry I can't do a link for you :jerk:.

even better, the recipe:
1 x 450g (1lb) packet dried haricot beans (soaked overnight) or 4 x 425g (15 oz) tins haricot beans (no sugar, no salt)
3 medium onions, peeled & finely chopped
4 cloves garlic, peeled & crushed
3 tablespoons extra-virgin olive oil
2 level teaspoons ground paprika
600ml (1 pint) water
2 tablespoons molasses
2 heaped tablespoons organic, sugar-free tomato ketchup (i have often left this out and it didn't seem to make much difference)
3 table spoons tomato puree

If using dried, pre-soaked beans, drain & rinse them, put them in a pan, cover with water and simmer for an hour until cooked. Drain and leave on one side until required. On top of the stove, fry the onions and garlic in the oil in a large, heavy casserole dish until lightly browned. Add the paprika and a little filtered water to make a rich sauce. Add the molasses, tomato ketchup and tomato puree and add water, little by little, to make a thickish sauce.


Add the beans and the rest of the water and bake in the oven at 150 C/300 F/Gas mark 2 for 2 hours until cooked. You may have to add a little more water after an hours cooking.

Sounds yummy!!
(Yes 1.30 euros a tin is just a rip off! but I do splurge occasionally as the kids and I love them on toast on a Sunday! you can get them in most supermarkets here now but I often wonder who buys them!)
