seed potato shoots

I bought some seed potatoes yesterday and have put them in an egg carton in my conversatory but not in direct light.

I have just read that the shoots should be green. My seed potatoes already had shoots on them but they are white? Should I leave them on or remove them allowing them to shoot again?

They are white now if they've been in dark..but as they get exposed more to daylight..they will start growing green leaves...but before that they will turn what ever colour is typical for that variety..purple, pink..or white.
Unless they are really tall shoots that would easily snap off later on when planting..leave them be..if they are tall..you can snap them off and start again, but only if the potatoes themselves are still fim. If they gone soft and wrinkly they might don't have enough energy left to grow new shoots.
