Midweek Meatloaf

Nothing exotic,just home cooked and warming after a cold day.

ingredients (4 servings)

2lb beef/pork mince
1/2 a red pepper chopped small
1/2 a medium onion chopped small
3 garlic cloves finally chopped
1/4 teaspoon marjaram
1/4 teaspoon Oregano
1/4 teaspoon basil
1/2 a tablespoon worcestershire sauce
4 tablespoons tomato sauce or ketchup
1/4 teaspoon english mustard
1 egg beaten
50grms dry white breadcrumbs
1/2 teaspoon marmite
a few drops of piri piri sauce or chilli sauce.
salt and pepper

dead easy,blend both types of meat in a bowl ...just dont over work or itll cause the loaf to bake very hard.



In another bowl add remaining bits and blend with a fork.



Gradually add meat mixture to other ingredients.



Lightly spray 2lb loaf tin with olive oil or line with parchment paper,fill tin with mixture....DO NOT pack down too tight.!!!!!!



I then add a couple of slices of smoked bacon on top just to add flavour.



Heat oven to 180 degrees.,and put loaf on middle shelf for 1 hour.
if you wish you can remove bacon for a further 10 mins just to crisp up
loaf top.



Remove from oven and let stand for 10 mins,then work a knife around
tin edges and loaf should come out in one piece(famous last words) I prefer it to be burned on top as it adds flavour and holds the loaf together
prior to slicing......well thats my excuse anyway.



Allow to rest before slicing as if too hot the loaf will collapse.

choose some seasonal veggies and serve with gravy.




Any left over loaf can be used in spag bowl sauce and noodles or it can be eaten cold in a sandwich(spread like pate) with salad cream and fresh onion sliced...or my fav is to break the remaining loaf apart and add some cumin powder garam masala powder and add 1 beaten egg and roll in seasoned flour and roll into small patties.... fry till warmed thru and have em as snax.......no waste !!!!!!!!!!!!!!

Made it today, very good a little tinkering with the basic recipe to get the flavours you like and you will have an excellent meal 9.9 out of 10

What a very good idea.  This will be tonight's dinner. 

No breadcrumbs but an extra egg.  I think I'll use half a green and half a red pepper, because that will look pretty and finely sliced Babington leek leaves.  I take your point about not packing the loaf too tightly.  With a few rashers of bacon on top, this must be miles better than our average midweek dish  :)

Worked very well.  I only had a pound of lean beef mince.  Added red and green pepper, a bit of chard, the Babington Leek, two table spoons of linseed, garlic,  marjoram, a little bit of chili (could have been more), forgot the mustard, but ketchup and worcester sauce went in.  No marmite either, but will do next time because that would have added flavour nicely.  Baked in two silicone loaf tins.  Came out fine and cut ok too.  OH said it was delicious.  Thank you Gazza.  This will be repeated.

Like Paul said, a little tinkering and adjusting to what we have and what we like.  Very flexible and forgiving recipe.

Nice one Galina,yes itsa a fun recipe that gets switched around with whats in the cupboard.
I made it tuther night and what was left over got the  Jalapenoes I had  and some of the Piri Piri sauce and reformed them into patties and warmed them through and served it in lettuce wraps with  some cheddar grated on them.
Nice refreshing crisp bite with a warm centre.....yum...and the main thing not so much bread...had a Diabetic good boy moment..... :D
