carrots

The old timers at my lottie tell me carrots are really difficult to grow because they fork and/or get eaten by carrot fly...I like carrots and was looking forward to growing them....do I need to use a special mix of compost so they don't fork, and what about carrot fly..any ideas ,or better still anybody know what to do?
