Just wondered if it's possible and how you do it...or is it just too cold in the winter to do this?

They aren't that tender so it should be possible... my neighbour has a peach in a greenhouse that does well. The big problem is leaf curl which affects those not covered in the Winter... it might be too damp in a poly to avoid it...  :-\

No problem...they like the cold weather and do not require any extra heating. They only need the cover from tunnel or GH to stop winter rain landing on the tree and getting the dreaded peach leaf curl desease that is spread by the rain drops.
So if you are considering...I can highly recommend.. ;)
I've got one in cold GH and I get buckets full of fruit.. ;D

..ahh..Saddad got 'there' first...if you keep tunnel vents open so there is some ventilation it should be fine.
