I have done a bit of experimenting with overgrown courgettes. First peel them and cut them in chunks. Put them in a steamer until just the outer bit is soft. They should have lost most of their water, and then put them in an ovenproof dish cover with either a bought cheese sauce or your own recipe. Sprinkle grated Parmesan cheese ( not the awful dried variety) bake in the oven until browned on top, about half and hour at 200c (not sure of gas equivalent) It is nicer than cauliflower cheese but unfortunately it will not freeze as it just goes to mush. The fresh courgettes will last for ages in the salad compartment of your fridge.

For any spares Italian style courgette and parmesan soup from the BBC is worth a go if you haven't already tried it.

We keep overgrown courgettes on the windowsill in the spare room along with the squash. We just treat them like a marrow
God made rainy days so gardeners could get the housework done

We have one that uses brie... and one that uses dolcellata... becoming Lactose intolerant was a real downer!  :'(

Sorry to hear that... I love cheese but tend to eat far less since being told my cholesterol levels are way too high. (Wish I'd never asked!!!)  ::)
