Thelma Sanders sweet Potato squash

Ive grown these for the first time this year & have about 24 on windowsills hoping they will harden off & store over winter. The weather here has been too wet to leave them on the vine any longer. Do they change colour when hardened off? They are a creamy colour at the moment. Also what is the best way to cook them? Any advice most appreciated thanks x Jane

They look tasty.... but I dont know anything about them. If they taste like their name they should be good..  :)

Hi Gavin, yes it was the name that persuaded me to try them ;D
Im so glad I did try some new varieties of squash this year as not a single one of my usual butternuts made any fruit. All squash were germinated at the same time planted out at the same time in same way etc so I can only put it down to the wierd weather we've had this year ::) The Thelmas are the only ones that have done really well, got loads of squash from 2 plants & still got more down at lotty.....was hoping some September sun would ripen them on the vines but there's a gale blowing in Kent today so think they will have to come indoors tomorrow :( x jane
