Succotash recipe please

I came across Succotash recipies on the internet while looking up a climbing bean named Succotash. (I've grown it the last couple of years and I think it is a real beauty. Ripe seeds look almost black and look so similar to sweetcorn kernals.)  I wonder if anyone has made Succotash, is it good any recipes or tips?

Jayb there are lots of differnt recipes for it, a bit like Borsch, no right or wrong ones but no one agrees on which is right if you see what I mean.

Personally I prefer ones with smoked bacon or ham in , some just have the beans and corn in, some use limas and some use regular green beans.

This is what I make..

1 cup corn, I use fresh but you can use canned
1 cup beans , I prefer Limas but you can use half and lalf with regular beans or all green beans
2 tablespoons more or less of butter  if bacon does not release any fat or you prefer not to use it
salt to taste, about 1/2 teaspoon for this size
1/8 the teaspoon paprika, I use my own ground Almas
1/4 pound of smoked bacon .
1 small onion ,chopped

fry the bacon,  add then stir fry the beans and chopped onion, then add the corn and seasonings, toss around till the beans are cooked add a wee bit of moisture if you need to but don';t add too much ,

there are variations which turn it into a soupy stew but I like it more like a side dish.

You can add a bit of red pepper for colour, a pinch of sugar is corn is not so  sweet.

I have a Soul food recipe that is interesting which makes it more soup like, it adds chicken stock, potatoes and okra but I think that is not true succotash and have never done it that way.

Basically it is corn and beans with whatever you fancy adding in..but not sloopy. Mine is different all the time

Thanks Jeannine I'll make this in the week. I've some frozen sweetcorn left from last year, hope this will be ok. My little lima's arn't ready yet so for the beans I  thought fresh Tarbais and Succotash, I'm hoping these will be good  ;D

Would some salted/smoked belly pork (fairly lean) be ok to use, or would it be too fatty? I'd cut it in small cubes if that makes a difference.

I tried your recipe last night yumm it is very good  ;D

Afraid I didn't get around to smoking as well as salting the pork and I couldn't locate my paprika so I used a little Peri Peri seasoning instead.
I'll definitely be doing this one again cheers!

Hi good, told you mine is never the same twice.. I think I may make it for oiur pot luck next week.. unless I do the zuchinni pie that is guaranteed to taste like apples

I had often wondered what that was but never figured it out! It looks yummy!
