Veggie Burgers

Made 52 of these yesterday! phew! will get us through the winter I hope!

The recipe was made up using aubergines and courgettes (glut veg!) I don't usually follow recipes, so I can't give exact measurements, but as long as you end up with a stiff mix it should be OK. You could add and veg you have an excess of or more herbs and spices.

Here what you need, sorry it's not a proper recipe, but you'll get the idea.................................

Toasted sunflower and pumpkin seeds (dry fry in a frying pan)
Red Lentils
Onions and garlic
aubergines
courgette
Peppers
Chilli (to taste)
Oats
Veggie stock
marmite
curry paste
cumin
ground corriander
polenta (of you could use more cous cous)
flour (don't use too much in the mix)
cous cous (If you need to stiffen up the mix
sesame seeds

1. Cook lentils until soft, don't add too much water
2. Whiz up the onions and garlic and fry in olive oil
3. Whiz and add the rest of the veg
4. Shouldn't take long to cook
5. add and mix in the rest of the ingreaients
6. Leave to cool for a while
7. If the mix needs to be stiffer add more cous cous
8. Make burgers then roll in a mix of flour and sesame seeds
9. Shallow fry, of part shallow fry and freeze

The other half said these were the best veggie burgers he had tasted! he can be a creep sometimes! :lol: but I must admit they taste really good.

Sounds nice, but could you leave out some of the ingredients due to the fact we are not a lover of curry paste?

I'd really like to try this,I'm not a great follower of recipes but could you be a teeny weeny bit more specific re amounts of lentils,oats and couscous ie handfuls, more lentils than oats ? that sort of thing. pleeese :)

I made 52 burgers, so hard to say, I would say, do the wet mix first with a generous amount of lentils, then add the oats and cous cous (allowing for time for the cous cous to expand) to until the mix is stiff. Sorry I can't be more specific, It's a made up recipe!

Thanks anyway I expect if I play around with it it's sure to be edible 'cos the ingredients all sound good :)

Thanks for posting the recipe Biscome. I hadn't thought of adding cous cous to the mix to hold it all together - so thanks for the tip  :)
I notice you put some marmite in, its great for adding flavour, I often use a splash of soy sauce/ mushroom sauce/ worcestershire sauce for the same reason  ;D  A mate of mine used to cook carrots in marmite and thyme - sounds odd but very good  :D

Anything with marmite will do me! soy sauce sounds good, I hadn't thought of that  :)

I use it in loads of dishes, gravies, sauces etc, an no need to add salt!

This sounds so good but unless someone can organise it with amounts of ingredients I shall have to pass.  Any cooks out there having a go!   I would be grateful to from them.

I'll be making this again even with 52 (now 48!) in the freezer, next time I'll measure all ingredients! I'm terrible for improvising, I only get ideas from cook books, find it beyond me to follow a recipe!

Griddled courgette flatties
boil together 1kg grated courgettes, 1/2 kg pots, l kg onions with 3 bay leaves and a pinch of salt and pepper. strain the cooked mixture and push through a seive.  (Think I would just mash it up and leave out the salt and pepper and take the bay leaves out, obviously).  Mix with 3 beaten eggs and shape into flat patties and place on an oiled griddle to brown, or fry or grill.
Will try this tomorrow to get rid of some lovely courgettes.
Got this recipe of a calendar but the ingredients sound OK so will give it a try, not sure about kg. but will guess.

I agree with Biscombe. I have often made something like this, and whatever you put in, as long as you add enough flour/bread/oats/hadn't thought of cous cous, thanks, to make the "dough" stiff and manageable, form it into flattened round shapes, then fry or bake it in oven, it is ALWAYS delicious.

And you can make the mixture into "cottage pie" as long as you add something to make it less dry (tomato paste and water/stock/tinned tomatoes, anything) and put mashed potato or sliced partly cooked potato on top, maybe with slices of tomato and some grated cheese.
