i am getting a lot of figs off my tree and want to make a relish or something similar. theres lots of recipes on the web but i wondered if anyone had a tried and tested recipe. something that will last for more than a few weeks.

I have no idea about cooking them but I found this  recipe of Nigellas for ham and fig salad and wonder if you could get together with Tim (See his recent Post) and we could all come round and taste the results?

sounds like a fabulous idea!  i dont really love fresh figs, i am training myself to like them but dont want to waste them seeing as they are free and theres loads of them.  :)

When I lived in Spain I had free access to several huge fig trees and used to make fig and ginger jam - yum!

You can use the usual ratio of 1 kg fruit to 1 kg sugar, add some lemon juice and up to 100g glace ginger (Whitworths -  I think I bought mine at Morrison's) and cook down in the usual way.

I prefer to use a packet of Jam Pectin as it lets you use less sugar. I don't like my jams and preserves to be too sweet.

I'd definitely recommend fig jam very delicious if home made. Planning a trip to friends in France later in the year just to stock up, and well, maybe catch up with them as well while we are there  :D
