Hello there,
Does anyone in the Leeds/Bradford area know of a stockist of Fermipan Red yeast?  (http://www.alternativestores.com/ethical-shop/food-drink/food/baking-sundries/fermipan-dried-yeast-500g/prod_313.html might jog a few memories)

Until last year there was a wholefood shop in Leeds which did, but now it's no longer, and I am trying not to order it online due to postage costs.

Best regards,
Sue

I buy my fresh yeast from Sainsbury's. and have a back-up stock of Doves Farm easyblend yeast.

What is Fermipan Red Yeast?

Hello Valmarg,
Fermipan is just like the Doves Farm easyblend yeast, but in a larger size.  I think it's actually aimed at commercial bakers - it comes in a 500g pack - but I have used it in the past and found it ideal for the breadmaker and I know from having looked at forums in the past that other home bakers have used it as well.

If it weren't for the Dove Farm back up, I would be banging my head against a brick wall, as the only alternative for breadmakers - unless anyone knows otherwise - is the sachets of easyblend yeast normally available in the supermarkets.

Best regards,
Sue

fresh yeast does freeze, if you put it in pre weighed batches.

But it defrosts very slimy so I put it, still frozen into the jug of measured liquid for adding to the dough and let it defrost in that.

Hello SueK,

I assume you prefer the convenience of the 'easyblend' type of yeast to the fresh.

The supermarket sachets of easyblend are as good as the Doves, but I've not priced them.  They may be hellishly more expensive.

I usually buy fresh yeast from the larger Sainsbury's stores.  It is available from the larger stores, Burton upon Trent and Matlock are the main stores I buy it from.  If you go to the bakery counter and ask for 'a block of fresh yeast' you will be sold a 750 gram block for 99p.  I would have to say that I have never yet used the whole block, but at the price it is extremely cheap.

I used to go into the stores and ask for x-ounces of yeast.  On one occasion I was told by the assistant that I was paying more for the few ounces than I would have been for the whole block, hence buying the whole block.

you know if you go to the bakery at tesco they give you fresh yeast free.

Yes, but only 2oz.  If you are going to do a BIG bake, it's not much use.
