Banana Cake/Bread

I have some bananas which are past their best. Anyone got a foolproof recipe for a person who does not make cakes?

hi katynewbie,
have you thought about a pre made cake mix from a shop,
i think it's just add an egg and water or milk, pour in tins add banana's and put in oven, but hey i'm not a gordon ramsey only a man ??? :( >:( ;D ;)

How about baked bananas?  Pop them in the oven with their skins on and bake until the skins go black and the bananas are mushy and hot inside.  Cut a slice of the skin off along the banana and sprinkle with lemon juice.

dont forget you can freeze your bananas till your ready to cook with them

I've only got one recipe for bananas:

Open bin
Place bananas in bin
Close bin

But then I grew up with school dinners in the '40s & '50s when bananas & custard was the default pudding. (I can still feel it in my mouth as I type!!!)

Katy, this is a wonderful recipe that I have made most weeks for the last 20 years and my family are not fed up with it yet!

Banana and Chocolate Chip Cake

2 ripe bananas
6 oz margarine
8 oz sugar
3 eggs beaten
10oz SR flour
½ tsp salt
½ tsp bicarb
4 oz choc chips

Mash the bananas.

Melt the margarine and sugar in a large pan.  

Add the flour, bicarb and salt.  

Beat in the eggs and bananas.  

Cool slightly and stir in the chocolate chips.

Place in an 8" deep cake tin and bake at 160º C (150º fan oven) for 55 mins or until skewer comes clean.
