Some of my onions (utah jumbo white) are bolting and thickening at the neck, should I pull these up now or wait until the foliage dies down and pick them with the rest of the onions?

You should let them fall over naturely and onions with thick necks known as Bull Neck do not store well so should be used first.
When you wake up on a morning say "good morning world" and be grateful
