Blight has struck - lots of green tomatoes, but no recipe. Can anyone help? :)

Here`s one I made this week .same problem blight affected toms :-\

2lbs green toms, 1lb apples (any type), 8 oz onions, All chopped up in food processor, (don`t bother to peel the toms, but peel & core the apples), bung it all in a large pan, add 1 pint distilled vinegar, in a piece of muslin add 3 teaspoons of pickling spice, & a thumb size piece of root ginger, tie this up with string & add to the pot. Bring to boil & simmer for 20 mins until soft. Add 14 oz brown sugar & 1 tablespoo salt, stir to dissolve , then simmer for approx 1 hour to thicken it all up
Bottle in sterilized jars. Mature for 3/4 weeks. If you like a bit of heat bung in a couple of chopped red chillies during the simmer.

Thaks Adrian - I have pulled off recipes from the interweb before but always like to follow one someone else has tried so i know its okay. Will use it tomorrow.

I currently use a recipe given to me by another plot-holder, which goes under the name of: "Grandma Jarrett's Green Tomato Chutney":

Chop 2lb each of onions & apples (weighed after peeling, etc) & 2lb of green tomatoes. (Cut them into largish chunks - small tomatoes just halved or quartered.)

Add 1lb each of sultanas & dark brown sugar; 1 tablespoon of ground ginger & a little salt.

Then 1 pint of malt vinegar. Boil as usual for up to 2 hours. (You may need to add more vinegar as you go along.)

I'm still using the remaining jars from last year's batch!
