best way to cook a gemsquash is simple, slice in half, roast in the oven take out and put lots of fresh butter and sugar in it and enjoy making myself hungry now lol.  YOu can also roast it and fill it with a mince mixtured that is gorgeous aswell

Cut in half, steam them, scrape out the seeds.

Season, fill with creamed sweetcorn, grated cheese on top, under the grill...

Yummy :D

Or you can just scrape out the flesh, add butter, and pepper.... thats nice too :)
