Greek cheese dip - tirokafteri

400g feta or similar
two bell type peppers (hotter peppers can be used)
small chilli pepper or chilli powder
lemon juice
olive oil
black pepper

seed the peppers and grill them until soft and they have that delicious

smell ...

cut into tiny pieces or let the blender do it if you trust it ...

everything else goes into the blender ...

note the quantities of olive oil and lemon juice are 'to taste',as is

the black pepper, so continuous sampling may be required ...

serve with fresh bread and either greek beer eg mythos, or a good

chilled white wine ...
