Jerusalem artichoke -- what to do

Happy New Year all.

I was in my local organic farm/veg shop and I was given JA's straight from the ground. I have had them a week or so now and was wondering if I could keep in them in the dark for a few weeks/months before I plant out into a large pot or something (I only have a balcony).

I will be moving in a year or two and am trying to stickpile as much as I can on my balcony. Its working out nicely albeit a little cramped.
