Jamie oliver borlotti bean recipe wanted

Hi, does anyone have the Borlotti bean recipe that Jamie Oliver did on his new programme a couple of weeks ago?

I though I'd do it but I can't find it anywhere.

Lots of beans to use up and I liked the look of it!  :P

I haven't got the Jamie Oliver recipe but I made a chunky Italian vegetable soup today using Borlotti beans, cavalo nero (Tuscan black kale) and anything else that was ready to harvest (courgettes and pattypans, French beans, black Spanish winter radish, celery leaf, tomatoes...)

Google 'ribolitta' for the classic Tuscan dish made with Borlotti beans and cavalo nero (you can use savoy cabbage as a substitute).

I picked up a bag of dried beans today and i was going to copy down the recipie so when i get to it i will post :)

Yes I did find it Cambourne7, the 4od service is brilliant!

I'll tell you roughly what it is but he's quite vague with measurements etc.

Put beans into pan of water, add home made bouquet garni made with a stick of celery, big sprig rosemary, sprig thyme, and summer savory (never heard of it!) tie them together and add to water. Then add a whole bulb of garlic into water (only take papery skin off but leave bulb whole) 1 tomato cut in half and 1 potato cut in half.

Bring to boil and simmer for 40-60 mins. Drain off 3/4 of the liquid, take out bouquet garni and throw away. Squeeze garlic out of it's cloves onto dish, add potato and tomato from pan and mash the them altogether then fold back into beans and liquid in pan so the beans end up with a creamy sauce over them. I think this is one of those dishes that is incredibly easy to do but tastes sublime!!  :P

I'll let you know what it's like when I've made it.  ;D

Great, i was thinking it was a great accompliament for boxing day dinner with cold meat etc....

So i want to practice before then.

yes I think that would be great Cambourne! Let me know what it's like if you do it before me, it certainly looked lovely!  :P

I cant taste anything at the moment unless its laced with mint or chilli so you had best continue before me.

Thanks for posting the recipe ... I really want to make this, any idea how many beans (weight cups etc). I am from outside the uk so cant download the program.

Hi Kaz, I've gone back and had another look and he doesn't specify an amount but he used a colander half full,  I think it also depends on how many you are cooking for and if it is to be served as a small side dish or a bigger snack and I reckon the quantities can be increased or decreased quite easily.

I'd love to know how it is when you do cook it...let me know!!  ;D

Thanks for your help ... I made this, used about 300grams of dried beans (6 cups cooked), must admit I am a bit underwhelmed by the results. I should have drained off more of the water as the result was a very thin sauce. Nice garlicy flavour. I may blend the rest for a yummy dip.

JO has always been a cook of the italian school more intrested in passion rather than exact weights and measurements. I think you need a bit of trial of error and practice with his recipies.
