onions

Hi everybody, could anyone help me with my onions? have noticed they are developing some fat, hollow stalks. Especially on the red ones. Picked a red one yesterday and used it today and the centre of the bulb was solid, could only use the outer. Although tasted delicious and really hot! What should I have done to prevent this and is it too late to stop any more of this happening?
Would appreciate any advice, this is our first year and loving every minute of it. Thanks.

The fat hollow stems are the flower stems - your onions are bolting. As soon as you see one of these flower stems, you should nip it off - though the onions are edible, they won't keep as long, so you should use these first.

thanks for the advice multiveg, Have taken all the fat flower stems off now. looks like we will be eating lots of onion pie now!!!! :D
At least I will know what to do next year and have managed to catch the whites before this happens to them.
