leeks???

I'm a veggie too and I love them in a recipe of Delias.

You make a shepherds pie filling using quorn or soya mince, onions, toms, carrots, garlic etc ---- then top with mashed potato as usual - but the best bit is that you then press sliced leeek into the mashed potato (so that they don't fall off) and then sprinkle over some grated cheddar - its delicious.

Or alternatively do an oven bake - by lightly cooking the sliced leeks, mixing with double cream and garlic and a tin of butter beans - then top with a mix of grated breadcrumbs and cheese and bake in oven - heavenly with some mangetouts or a green salad.  :)

Me too, have been for 20 years and looove leeks, leek & goats cheese tart pastry made with wholewheat flour with a little cumin added - leek & mushroom pie - leek & spinach bake -  leek,courgette, spinach & silken tofu lasagna - I do a low fat, leek & broccoli pasta with tomato sauce - leek & mushroom sauce using a can of cambells condensed asparagus soup and cook with quorn fillets fab with chips & mushy peas. Yes you could say I love leeks and they hold in the ground all winter waiting for you, could it get any  better
