When I make any jam with peaches or nectarines, I add some ripe mango as well.  It adds a lovely bit of bite, as peach on it's own can be a bit sweet for my liking.  About 1 large ripe mango to that amount of fruit will do it.

This uses nectarines, but would be OK with peaches as they are interchangeable

NECTARINE AND BLACKBERRY JAM

1.5kg/3lb 5oz nectarines
1.5kg/3lb 5oz blackberries
juice of 1½ lemons
1.5kg/3lb 5oz sugar

Halve and stone the nectarines and cut the flesh into chunks.  Pick over the blackberries, removing any stalks or leaves.  Put the fruit in a preserving pan with the juice of a lemon and 300ml (10fl oz) water.  Bring to the boil, then turn down to a simmer, and let the fruit cook for about 20 minutes, or until tender.

Add the sugar.  Stir to help it dissolve, then bring to the boil and cook until the setting point is reached, skimming off any scum.  Add the juice of the half lemon, stir, put in sterilised jars and seal.
