Dave's delicious doughnuts

I just made some blackberry mini doughnuts.

1. Freeze your blackberries
2. Make some special dough

1 medium egg
1 tbsp olive oil
1/4 pint of water
12oz self raising flour
1 tbsp sugar (any type will do)
1 tsp salt (or less if you are watching your salt intake)
1 tsp baking powder
1/2 tsp dried yeast
Mix all the ingredients together in a bowl (or if you're lazy like me,
put them all in a breadmaker and set the timer to basic dough)
Allow to rise, or whatever else you do with dough.

3. pick off a small piece of dough and wrap it around a frozen
blackberry leaving no blackberry showing (you can use fresh,
but it will be messier)
4. Place them on a floured plate to defrost, otherwise they won't
cook properly.
5. Fry a few at a time in some hot oil until golden brown.
(watch out for any spitting if the blackberry juice escapes)
6. Place on kitchen paper to drain.
7. Sprinkle with some sugar and scoff the lot before anybody else sees them.  ;D

Yum!!!
Can you use a frying pan, or do you need to deep fry?
I never deep fry anything, and thought that you need to deep fry doughnuts, so have never made them.

Still in the plot   36 Leeks, 1x rows parsnips, 2x  rows chard, psb, broccoli, 5 rows garlic, 1 row swede, lots of onions - started in rows, but the birds had them and now they are random!!

I fry mine in a frying pan held at an angle, so they are just covered.
Frying them flat would cause them to splay out and the bottom or top
would be too thin and the juice would come out.
The flour tends to come off and accumulate in the bottom,
so using a deep fat fryer wouldn't be a good idea.
The fat needs to be clean otherwise you would get all the little
black bits clinging to the doughnuts.

You could also use a very small saucepan to fry them in.
Let the oil cool afterwards and filter it through kitchen paper
and return to the bottle. Use a funnel and make sure it is completely
cool first.

I just finished some more, I won't be scoffing all these tonight.
I'm taking them into my art class tomorrow.
I cut some in half so you can see the scrummy inside.
