Snack Loaf - YUM

Hi

This is a Bill Granger Recipie i have fallen for big time.

I am giving you the recipie as he gives it but then showing you my amendment :-)

Apple, Dried Cherry & Almond Loaf

Needed

50g Rolled Oats
300ml Milk
240g self raising flour
1 ts baking powder
125g Dried Cherries roughly chopped
50g Dried Apple Diced
75g soft brown suger
1 tbs ground cinnamon
3 tbs honey
1 egg beaten
5 tbs roughtly chopped almonds
Lightly Greesed loaf tin lined with baking paper

Put the oats in a bowl with the milk, and leave to soak for 30 min.

Once this 30 min is up preheat oven 180 degrees C.

Sift the flour and baking powder into the bowl with the oats, add the dried fruit, suger, cinnamon, honey, eggs and 3 tbs of the almonds.

spoon the mixure into the tin and top with the last 2 tbs of the almonds.

Bake for 45 min ( check that its cooked by sticking in a knife and making sure it comes out clean ).

Leave to cool if you can and then try it.

Best served toasted with butter.

I am not a fan of Cherries so i make up the 125g of the cherries with apricots and prunes diced and replace the almonds with walnuts :-) yum!!

Ummm, that sounds nice Cambourne, could I use glace cherries instead of dried?  They are a bit hard to find here.  Thanks for that though. :)

Hi Tulippa - not sure but give it a go :-) night need less honey as the glace cherries are much sweeter.

HI Guys,

Finished what was in the freezer and have just made another batch of the snack loaf is the one on the right. This loaf has bananas, apricot and apple which is nice toasted (eating a slice now).
