Sun dried tomatoes

There is an amazingly cheap fruit & veg wholesalers near to my workplace.
Last week I bought a box of vine timatoes (£4.50) which were large and
ripe but firm skinned.

This recipe for sun-dried tomatoes is in Delia's Summer cookbook:-

61b Tomatoes
1pt Olive Oil
pinch salt


Wash tomatoes, cut in half and remove seeds. Place, cut side down on
double kitchen roll to drain, turn over and sprinkle a little salt into each tomato.
Into oven gas mark 1/4 or  80c
Place cut side down directly on to 2 oven shelves and place foil on floor of oven to catch drips.
Do not shut oven door, instead wedge wine cork at side to allow heat to escape. This allows the tomatoes to dry, rather than cook.
Leave for 6 hours and check. Tomatoes should be dry but have a slight fleshy/chewy texture.
Put into clean, *sterile jars   
*sterilise by washing in soapy water, rinse clean and put into a warm oven to dry
Put tomatoes in jars and top up with oil.
* i added some paprika, dried basil and garlic for extra flavour.
I'm leaving mine for a couple of weeks to allow tomatoes to soften and to flavour the oil... :P
Lasts up to 6 months

Thanks for this recipe - I am hoping to have a surplus of my own tomatoes to do this with at some point this summer. Havent seen cheap tomatoes at the market yet, but if I do...
