My Amarylis Apple Blossom (as in my avatar) was in flower at Christmas 2005. When the second flower stem died down, it produced a single pair of leaves. Normal so far I presume?

After several months ,we stopped watering it, and put it on the toilet windowsill, where the leaves stayed green for ages. Still no water given. and the leaves wouldn't die off, so I cut them off and left it till last month (still no water).

The bulb is now twice the original size. Brought it back to the kitchen a couple of weeks ago and started watering again, and the leaves have started growing again, before the flower.

So what's going wrong please?
Grow your own and enjoy the fruits of your labours,

The Amaryllis will flower, then the leaves will remain to gather as much energy they can in order for the bulb to grow, as is in your case.
When you cut the leaves off, it then goes into a dormant state, awaiting for the next watering, which if left longer than 12 weeks, will induce the flowering process over again.
You can get an Amaryllis to flower 3 times in a year, 4 if you push it, but give it respect, let it do what it has to, let it have a rest, and then it will reward you with the lovely flower show, many times over.
With the bulb growing, just repot it accordingly.
Don't worry about tomorrow, or yesterday, just think about today.

Thanks Brian.

So... now it's growing leaves again, should I just let it go on for a while, and then stop watering it again?

Continue to water it, it will flower, and then leave it again for a couple of months, start over again.
I have one that i am going to start off again. I think they are amazing.
