What to do with my cooked beetroot?

I have just got an allotment and have taken up the beetroot. Was told to boil it in a pan until the skin came away easily. Have done that and have frozen some for use later. Do I need to pickle it all or are there other simple tasty recipes I could use the cooke beetroot in. Also. what is the easiest way to pickle it???? Need to get this done ASAP as they are in a bowl in the fridge.

Beetroot Chutney, incorperating apple and onion is nice.

Or a simple salad: slice or dice cooked beetroot, dress with vinaigrette and garnish with chives or spring onions

grate beetroot and onion mix  with mayo salt and pepper add  lemon juice to taste and a bit of dill (fresh or dried) and you have a beautifully coloured yummy salad. :)

Diced and stirred through cooked couscous along with cubed feta, a squeeze of lemon, and some olive oil. Some sliced spring onions, olives, or pine nuts might be a nice addition too.

Untill they beat me to it I thought why not eat it? Watch out for funny coloured "water works" though!
