Baby Sweetcorn

Hi all - another stupid question I know - but here goes!!!

??? Some of my baby sweetcorn are getting real big - If I don't pick them and let them mature will they grow into "proper" sweetcorn cobs??

And will they taste nice and sweet?  ???

grew em last year ,and found if you dont pick em small then throw em away,trouble i found was picking at right time,gave up in the end,dont mean to dishearten you.hope you have better luck than me
