Are my parsnips finished?

They have started to grow again.  Does this mean that they will be past eating? 

If I dig them up and put them in the shed, will they keep better?

What are other people doing with theirs?

Is it a good idea to save and collect seed?

The normal recommendation is to lift them & heel them in somewhere out of the way. Personally I lifted mine and just kept them somewhere dry & cool, some have gone a bit soft but they still taste good

The last of my parsnips were put into the freezer, we regard them as winter fare, so will eat very few between now and next autumn, our freezer is still groaning under vegetables, as I pointed out to my wife !!!
The impossible is just a journey away ...

      I left one parsnip in last year to flower as they attract beneficial insects, forgot about it , it set its own seed , and produced lovely parsnips.Did'nt have to worry if the soil was right temp to germinate, they just did it all themselves :)shades
