can mature sage plants be divided into smaller plants, if so whats the best time to do it

Ceratonia

Yes, it can be divided and spring (ie now) is the best time to do it.

It's also very easy to take cuttings from - sometimes the best thing to do if the original plant has got very woody.

Yep-not sure it`s division or cutting-just rip it apart and re-pot in a gritty compost. It works.

Curryandchips

I can endorse that, seeing as last year my sage got very large and woody, so I just ripped it out and replanted two 'pieces', and hey bingo, it looks great now.
The impossible is just a journey away ...
