Autumn Vegetable Tian

Went to visit a friend and found this - its yummy   ;)

Autumn Vegetable Tian
(taken from Jewish Chronical 21/10/05)

3-4 tbsp olive oil
1 large onion
2 green, red or yellow peppers
3 small aubergines
1 plump garlic
Sea salt
10 grinds blk pepper
2lb vine tomatoes ( with big pinch brown sugar)
2lb courgettes
½ tsp herbs de Provence


Topping
Little extra vergin oil
3 tbsps freshly grated Parmesan cheese
1 cup fresh breadcrumbs


Methed
Slice all veg arrange in layers in dish
Bake 30 mins 190 deg
Add topping
Bake burther 15 mins
