Request for pumpkin curry recipe

Crash

I was given a pumpkin the evening that I did my back in, so after reading this thread I got my beloved to drive me to the local Asian food supermarket and stocked up with all the spices I needed. 4 pans of curry later the only one we didn't like was the pumpkin one... Potato & cauli, potato & cabbage and potato with gravy were all good. At least I now know that I won't be bothering to grow pumpkins!

Just making a third batch of curry sauce. I have done some measurements, and concluded that I have made 36 litres of curry sauce in total!!!

I am going to try Beryl's recipie this week as I managed to drop a large 5lb butternut squash and it has a split now.

Does it freeze OK once cooked or will the cubes loose their texture and turn to mush when thawed?

The pumpkins cook down to a puree, but I gather that the winter squashes eg butternut, tend to hold their texture more. However, I have not tried freezing solid pieces ...
