Dried Carrots

Again, one of the topics that floated up out of some interesting chat, was the subject of dried carrots. Not something that I have ever come across, this is a method of storage similar to 'sun-dried' tomatoes. The resultant dried food is supposed to make a pleasant chewy snack, or may be resoaked to restore the original carrots.

If the snack is pleasant, then I would be interested for stuff for at work, so does anyone have any experience of this?

A dehydrator would work best, but a very low oven temp would do it too. Cut them quite thin (5mm or less) so they dry evenly.

As with all dried food, the flavour intensifies as does the sweetness (but you don't need that, not now the happy shirt's back... ;))

Rehydrating dried carrots turns them soggy and spongy and they are not nearly as nice as fresh carrots, not much flavour remains. About the only thing you can use them for is adding to a stew or soup. I wouldn't reccomend them as a pleasant snack, the only time I've eaten them dehydrated was during a disasterous hike. To be fair though the dehydrated carrots I had were commercially prepared, so might have been quite old, maybe they're nicer fresher? Thinly sliced carrots, baked or fried to a crisp are far tastier in my experience.
