Eat them!

In Spain, the root is given to pigs to eat, the finest part, the leaves, are a delicacy used in stews and soup.

David R, have you EVER tried eating parsnip tops? I have tried most things and think they are not worth the effort, but maybe you ahve some recipes?

no never tried them, as strangly enough, i dont like my greens!

my sympathies are with the pigs, i am most definately a root man.

Be carefull handling Parsnip leave and stems the sap can have a burning effect to sensitive skin
