When you say gone to seed - if there are seeds there. then you could save them. or if you mean flowering, you could wait until they set seed and save it, I always save seed in a brown paper bag or paper envelope, in a cool dry place.

but will they come true to seed?
I have always thought that  members of the crucifera- family interbreed. e.g. if there`s some other cabbage flowering in the neigbourhood or even rape or mustard etc. you might get something but not necesarily purple sprouting.

They're promisuous interbreeders so you can't be sure. That being said, I let some of my turnips go to seed one year, and got a crop of turnips off it.
