I have been using this recipe for years and it always turns out well.
Banana teabread
Ingredients:
7ozs self-raising flour,  1/4 level tspn of bicarb of soda
1/2 level tspn of salt, 3 oz butter, 6 oz sugar, 2 eggs beaten, 1 lb bananas, mashed,  4 ozs coarsely chopped nuts.

Method:
Grease and line a loaf tin 8 in. by 4 1/2 in. (top measurement) Sift together the flour, soda and salt. Cream the butter and sugar, add the eggs and beat well.  Add the bananas and beat.  Stir in the flour and nuts.  Turn the mixture into the prepared tin and bake in the centre of the oven at 350 degrees F (mark 4) for about 1 1/4 hour., until well risen and just firm.  Turn out and cool on  a wire rack.

You can mix some banana mash into some cream cheese  and icing sugar if you want to decorate the top.  Use a fork to make a pattern on the top. Hope you enjoy it.   :D busy_lizzie

thanks BL I will gve that a go.

Never thought about decorating it :D
Its more for use as cycling fodder as it's easy to in foil and stick it in a back pocket.

I will have to convert it to metric before I start  :P

Sorry Diesel re the weights. I still operate in lbs and ounces and it is from a very old recipe book.  The decoration is my addition as I used to make it for tea parties and it looked prettier that way, but you can easily just slice it and have it plain. Happy snacking and cycling.   :) busy_lizzie

Thanks, BL.  Went down really well here too.  Actually too well.  15 yr old son (or should I say gannet) polished off half the loaf before we got a look in.  Have to make another one now.

I always make this recipe & everyone loves it....also very quick to make

1 ripe banana
1 egg
85g (3oz) sugar (I always use demerara)
55g (2oz) suitable margarine
1/2 teaspoon vanilla essence
1/2 teaspoon salt
140g (50z) wholemeal s.r. flour (I use half w.m. & half ordinary)
1/2 teaspoon bicarb. of soda
    ---------------
I always add 4 oz sultanas (cos I like em) & do slightly less sugar

method

1). Put banana, egg, sugar, margarine, vanilla & salt in the liquidiser and blend on maximum speed for 1 minute.

2).Sift flour & bicarb into a bowl and pour the liquidized mixture over.

3).Mix on low speed just long enough to mix the indregients thoroughly  (I always just mix these together in bowl by hand)

4). Bake in a 1lb loaf tin for approx. 45 minutes at 375 F (190C/Gas mark
                                                                                                            5)

I usually slice & butter it but it's nice just as it is.....it freezes well.

This sounds very good too.  Great to be able to use the liquidiser, makes it very quick and easy.  :) busy_lizzie
