Any shortcuts to making chutney?

Made plum chutney yesterday and it took hours and hours and hours. Using a pretty standard recipe similar to Delia's. Does anyone know any shortcuts that work without ruining the flavour?

Hi,

For some reason I always find plum chutney takes longer than apple.  For a shortcut if you try Delia's Doverhouse Chutney she suggests using a mincer to process the apples etc, it does help on the preparation time, but all chutney takes a while to cook as far as I know.

I think I might try splitting the mixture between two large pans next time, that should speed up evaporation of vinegar.
