Zucchini loaves for Chriscross. (Courgette)

 This is most likely too late for this season but it might do OK next...
 I makes a nice loaf sliced and buttered, its not too sweet. it is as I said a tried and true recipe, enjoy.. qahtan


Zucchini Loaf
 
#1.  4 eggs               >
       2 cups of sugar   >   Beat well
       1 cup of oil         >
 
#2.   3 1/2 cups of flour
        1 1/2 tsp. of baking soda
        1 1/2 tsp. of baking powder
        1 1/2 tsp. of salt
        2 tsp. of cinnamon
     
Add #2 to #1 slowly with zucchini, raisins, nuts, vanilla.
 
        2 1/2 cups of grated zucchini ( peel & all )
        1 cup of raisins
        1 cup of nuts
        1 tsp. of vanilla
 
Bake at 350`  for 1 hour.     Makes 2 loaves.

I make courgette bread in my breadmaker. Just replace the liquid in the normal bread recipe, with grated courgettes to slightly more than the same volume of liquid, depending on how moist your courgettes are.
There is absolutely no need to salt the courgettes or squeeze out the juice. Indeed, it would spoil the flavour.
