I took a risk on those - I planted them right at the very beginning months of the recommended planting times. The weather in the South is really quite mild this year, so I think I got away with it - but a frost at the wrong time could have culled anything that was growing. There are two different breeds of parsnip in there - I forget the names but I labelled the rows. Sadly a small animal ruined the corner of that bed by digging down - still, only about a 10% damage to the area, I can live with that.
Still got SOOOO much to do down there - I've increased the number of boxed beds to 14, but I'm only planted in 6 of them so far. Just a little soil prep needed and I'm ready for my next planting ;)
