fruit and stuff

i have a whole lot off fruit and stuff  :-[
goosberrys, apples, plums, rassberrys, pears, blackberrys,black and red currents and  strawberrys. :o
i will have so much fruit i dont realy no what to do with
please will you all help ::)
i am after most is the recipe for summer pudding as that is nice
so once again HELP ;D

Here is Delias summer pudding - I have made it using whatever fruits I had to hand, and lurve it!

When the fruit starts coming, I make jam, icecream, sorbets, pies/puddings/cakes, chutneys and sauces and I freeze lots to use in the winter in puddings.  Also of course, the sloes, damsons and plums make great gin!  :P

I have never bottled fruit, but mum does strawbs and altho they shrink in the bottle, they are devine!

I freeze loads of our fruit: rhubarb, gooseberries, all the currants, rasps, blackberries. In fact I still have goosegogs & blackberries from last year. I make loads of different recipes from the fruit but one of the easiest things to do I find is to make what I think is called a compote in posh circles which I serve on ice cream either hot or cold. It is basically like the filling for summer pudding but I use whatever is to hand. By the way, try autumn pudding based on plums, apples & blackberries. If I have loads of strawbs & they get a bit bashed I whizz them up with a bit of sugar & use that as a sauce (& freeze it). Hope this of some help.

I'm very envious of yous all with your fruit on your lotties.  I don't have anything but one guzgog someone gave me today - just a twig so I've put it in a bucket of water til I get round to planting it.  I think I have a bramble in the hedge as well.  So no summer pud for me yet  :(

Don't despair Wardy!  Don't forget, as well as gooseberry fool you can puree and make a great sauce to go with fish, like Mackerel!   :D

I made Delias summer pudding yesterday using raspberries, blackberries and blackcurrents from freezer. Delicious, OH loves this !
