Spinach Pakora Fritters + Dips

Cant beat a tasty crunchy Pakora with plain grilled fish,and these Spinach Jobbies are an  Indian side dish that works really well.

Although ive eaten these cold with the two dips as snax and enjoyed them also.

Spinach Pakora Fritter Ingredients................

1 Bunch of Spinach(Leafbeet) finely chopped
1 Large Onion Finely Chopped
2 Cloves of Garlic chopped fine
120 Grms Gram Flour(ive tried self raising but Gram is better)
1 Tsp Turmeric Powder
1/2 Tsp Chilli Powder(or more if wanted)
1 Green Chilli chopped(optional)
1 Tsp salt
1/2 Tsp Sugar
Oil for frying



Mix together the chopped spinach,chopped Onion,Garlic,Gram Flour,Turmeric Powder,Chilli Powder,salt and sugar in a bowl.


Gram Flour seems to bind the ingredients together well.



Now add 1 Tbsp of warm water at a time till you have a thick gloopy Batter that sticks together if formed into a small ball.



Heat Oil in Wok/Deep Frying pan to a medium heat,I prefer shallow frying each fritter 4 to 5 mins each side,but will break one open to check contents are cooked through warm and soft inside but crispy on the outside.

Once cooked drain them on kitchen paper.

The Dips are Fiery and Cool so you get to choose which is suited to your palate...I just have one dipped hot then one cool....as there both tasty.



Tamarind Dipping Sauce.

1 tin of Italian Tomatoes seeded and chopped(or fresh equivelent)
1 Tsp Piri Piri Sauce
3 Tbsp Tamarind Paste( or too taste)
1 Tsp Ground Cumin Powder
1 Tsp Garam Masala Powder
2 Tsp Sugar
1 Tsp Salt
water



Mix together and add extra water if a thinner dip is preferred.

Coriander,Mint and Chilli Dipping Sauce


1 Small handful chopped fresh coriander
1/2 small handful  chopped fresh mint leaves
1 Tbsp finely chopped fresh jalapeno pepper.
1/2 Tsp minced garlic
1 Tsp fresh grated Ginger root
2 Tbsps fresh lemon juice
1/2 Tsp ground cumin
1 Tsp Runny honey
250 Grms Low Fat yogurt(or more to taste)

Puree all the Ingredients in a food Processor(other than the yogurt)
once mixed add Yogurt to taste as the herbs can be intense,cool in the fridge for two hours.



Ready to serve.



Keep Fritters in warm oven.



The Dips are also Tasty with Lamb and Oven Cooked Chicken Pieces.

That looks SO wonderful....reminds me of helping a Pakistani family in Bradford with their paperwork. The mother just snapped her fingers and within a few minutes her daughters had made us fresh hot pakoras and dips. Such a delicious snack, and I am going to try it tomorrow with a lot of spinach I left for my husband to eat while I visited my daughter in Germany, and he did not touch it......

Thanks, Gazza - I did this for supper tonight, with the  two dips, and it was DELICIOUS! Just about enough left over for tomorrow  as well.  We ate it with left-over Toad in the hole, a version I do with sausages, chicken liver and bacon.  It went very well together!

Pleased you enjoyed em Peanuts.............

now get bizzy and do the recipe you explained as id like to try your toad version...........jude doesnt like chickens livers....and when asked she said....it doesnt appeal to her........so tween you and me.....ssshhhhh     Id like to make your recipe and tell her its piggies liver just to see if she acually knows the taste difference.

Hope your T in the H went well, and Jude accepted it! We have made it several times for various French friends and they are disbelieving when we tell them what it is called! But they like it very much all the same.

That is just great!  Come to think of it my other half doesn't like chicken liver very much, but accepts it completely cut into small pieces in T in the H. 
One of our family inexpensive standbys for years has been Timbale of Chicken Liver, which I seem to remember my mum used to make from an old Good Housekeeping  recipe book when I was a kid.  Our kids had it and loved it, and I still do it.  It's a lovely mess of  pasta, chicken liver, tomatoes, cheese, and milk.  Do you know it? When I google it,  no recipe bears any relation to our recipe though!

Ok, will do tomorrow - we've just celebrated our 37th wedding anniversary with a delicious four-course home-cooked meal, with rather more butter than I care to think about, and some excellent Spanish wine . . . . .  and I don't think I could get any recipe correct now . . . . . . . . !
