Cant beat a tasty crunchy Pakora with plain grilled fish,and these Spinach Jobbies are an Indian side dish that works really well.
Although ive eaten these cold with the two dips as snax and enjoyed them also.
Spinach Pakora Fritter Ingredients................
1 Bunch of Spinach(Leafbeet) finely chopped
1 Large Onion Finely Chopped
2 Cloves of Garlic chopped fine
120 Grms Gram Flour(ive tried self raising but Gram is better)
1 Tsp Turmeric Powder
1/2 Tsp Chilli Powder(or more if wanted)
1 Green Chilli chopped(optional)
1 Tsp salt
1/2 Tsp Sugar
Oil for frying
Mix together the chopped spinach,chopped Onion,Garlic,Gram Flour,Turmeric Powder,Chilli Powder,salt and sugar in a bowl.
Gram Flour seems to bind the ingredients together well.
Now add 1 Tbsp of warm water at a time till you have a thick gloopy Batter that sticks together if formed into a small ball.
Heat Oil in Wok/Deep Frying pan to a medium heat,I prefer shallow frying each fritter 4 to 5 mins each side,but will break one open to check contents are cooked through warm and soft inside but crispy on the outside.
Once cooked drain them on kitchen paper.
The Dips are Fiery and Cool so you get to choose which is suited to your palate...I just have one dipped hot then one cool....as there both tasty.
Tamarind Dipping Sauce.
1 tin of Italian Tomatoes seeded and chopped(or fresh equivelent)
1 Tsp Piri Piri Sauce
3 Tbsp Tamarind Paste( or too taste)
1 Tsp Ground Cumin Powder
1 Tsp Garam Masala Powder
2 Tsp Sugar
1 Tsp Salt
water
Mix together and add extra water if a thinner dip is preferred.
Coriander,Mint and Chilli Dipping Sauce
1 Small handful chopped fresh coriander
1/2 small handful chopped fresh mint leaves
1 Tbsp finely chopped fresh jalapeno pepper.
1/2 Tsp minced garlic
1 Tsp fresh grated Ginger root
2 Tbsps fresh lemon juice
1/2 Tsp ground cumin
1 Tsp Runny honey
250 Grms Low Fat yogurt(or more to taste)
Puree all the Ingredients in a food Processor(other than the yogurt)
once mixed add Yogurt to taste as the herbs can be intense,cool in the fridge for two hours.
Ready to serve.
Keep Fritters in warm oven.
The Dips are also Tasty with Lamb and Oven Cooked Chicken Pieces.
